Aggressive Farming
Each row of our vineyards requires specific farming techniques to heighten expression of fruit and terroir. We love taking risks in farming — the rewards are worth it.
Care
Our grapes are harvested carefully by hand, then we sort each lot at Elyse Winery.

Barrel Selection
Each block from our vineyards requires a specific picking time in the field and a different treatment of barrels in the cellar. From bold heavy-toast Darnajou to aromatic medium-toast Taransaud, we select a deliberate combination to maximize each vineyard's expression in bottle.
Technology
Optical sorters, shaking tables, tracking software, and more allow us to fine-tune each vineyard every year. We are always learning what works best, and there has never been more data available to make next year's harvest more precise.

Elyse Winery seeks out vineyards where each varietal can express itself in its purest form. Thanks to decades of partnerships and hard work with our growers and farmers, each Elyse vineyard-designate wine embodies a specific time and place.
